Had an acquaintance stop by the other night. They noticed THE BOOK casually laying upon the coffee table. Pride of place like a supermodel spread out upon the shag carpet. On looking at the glorious image of our big brown handed Pert she exclaimed, “Is that David Dickinson?” I sharply set her straight and against my better judgement allowed her to peruse the recipes, mentioning that I was planning to make the Macaroni Slices. Her response, “yuck, sounds like a retro seventies student nightmare.” I called her a taxi and she left the building.
I’ve halved the ingredients as usual. I clearly don’t have to worry about sharing.
Ingredients:
55g macaroni
45g lentils
55g breadcrumbs
1/2 onion (chopped)
15g butter or margarine
seasoning to taste
grated cheese
I’m making my own breadcrumbs for this. Grate your bread onto a baking tray. Gas mark 2 for about 30 minutes. This is the result. I’ve made plenty for general use.
Next. Soak the lentils overnight (not sure how necessary this is - did it anyway). Then cook them and the pasta (separately) until soft. Mash them together and work in breadcrumbs.
Fry onion in butter and add to mixture. Season to taste.
Grease a loaf tin and press in mixture. Cover with greased paper and bake on gas mark 4 for 1 hour.
Before:
After:
Leave till cold - I put it in the fridge overnight. Turn out and cut into slices/fingers. Sprinkle with cheese and brown in oven orin broiling loft under grill.
And we’re done.
VERDICT: Coming out the oven it looked like a savoury flapjack which was kind of cool actually. Covered in grilled cheese it started to look genuinely tasty. Guess what? It is. Maybe not the most exciting of snacks on it’s own. The fingers are stodgy and taste mostly of onion which mixes with the strong cheese flavour well. The recipe suggests a tomato or onion sauce to go with it. I’d say using a relish of either would pep this up nicely. My wife joined me for this inexpensive lunch and said it was ”good”, ”what’s not to like?” She even liked the crispy edges which I was less keen on. The softest bits are better IMO.
A surprising success.
